History of Hashemi Rice

The cultivation of Hashemi Rice, one of the organic and non-genetically modified rice varieties, became common in Mazandaran in 1999. In fact, Hashemi Rice was first discovered and cultivated in 1985 in the village of Chaparkhaneh in Gilan province by a person named Yousef Hashemi Zadeh. After discovering and cultivating it, he introduced this rice to the country under the name “Hashemi Rice.” Currently, Hashemi Rice has the largest area of cultivation among indigenous and high-quality rice varieties in northern Iran.

Avoid Direct Sunlight: Store rice in a place that does not receive direct sunlight, as this can affect its color and taste.

Use Transparent Containers: If you use transparent containers, you can easily check how much rice remains and avoid opening the containers frequently.

By following these tips, you can store your Iranian rice properly and get the best use out of its taste and quality.

How to Cook Hashemi Rice

Hashemi Rice can be cooked in two ways: the “Keta” method and the “Polished” method, as follows:

Keta Method: Wash the rice with cold or lukewarm water and soak it for at least 30 minutes. This helps the rice cook properly and the grains separate. When washing, be careful not to rub the rice too harshly, as this can cause it to break. After soaking, add the rice with water and salt to a pot, then cook over medium heat until it comes to a boil and is fully cooked. Once all the water has evaporated, cover the pot with a lid and let it steam for 20 minutes before serving.

Polished Method: As in the previous method, wash and soak the rice in cold or lukewarm water. In a larger pot, add water twice the volume of rice (for every cup of rice, add two cups of water). Bring the water to a boil, and you can add a spoonful of oil and salt to prevent the rice from sticking together and enhance the flavor. Add the soaked rice to the boiling water and cook for 7 to 11 minutes. You can test a grain by pressing it between your fingers; if it has softened, drain the water. After draining, pour some lukewarm water over the rice, making sure it’s not too cold, as this can reduce the rice’s internal heat and affect its quality. Next, grease the bottom of the pot with butter or oil, add some potatoes, bread, or sesame for a crispy bottom layer, and then add the rice. Let it steam for 30 to 40 minutes. Once cooked, you can add butter or oil and serve.
